Peanut Butter

Though peanuts are in the legume (dry beans) family, we will give peanut butter it's own post....

Peanut Butter is not a 'long term' storage item, it  will usually store about one year in cool conditions.  When the year time is up, I put the peanut butter into fridge....this extends storage time about 3 to 5 more months.


  
I didn't include peanut butter powder on the "52" list, but here is a link if you're interested......it keeps for 5 to 10 years unopened under proper storage conditions. It is lower in fat than regular peanut butter. Would be great used in a variety of recipes, as a low fat peanut butter spread, in smoothies, cookies and desserts. You have already tasted it if you've made purchased peanut butter cookie mix.

One of my goals with food storage is to have comfort tastes that we are used to, in some form or another, when fresh would not be available. Keep this in mind while adding to your basic food storage plan and list.



Using Peanut Butter

Peanut butter n' jam on whole wheat bread or on whole wheat toast.

An easy way to add protein to breakfast oatmeal: Put 1 T. peanut butter into piping hot oatmeal, let sit a minute, then stir.

A dip for apple or banana slices, celery and carrot sticks.

Make a banana peanut butter smoothie (and use dry milk powder in it also).

Use peanut butter instead of tahini when making hummus.

Put it on your hot pancakes or waffles, then drizzle on a bit of honey.

Flourless peanut butter cookies.

No bake peanut butter oat cookies.

Whole wheat crepes with peanut butter and jam.

Peanut butter, caramelized onions, chicken broth, carrot soup.

Peanut butter squares (taste like Reese's).

Peanut Butter Snack Balls

1/2 c. creamy peanut butter
up to 1/3 c. powdered sugar
1 T. dry milk powder
1 T. water
up to 1 c. quick oatmeal

Stir all ingredients.  Form small bite-sized balls.  Can roll in cinnamon sugar, but also good plain. Chill 10 to 15 minutes.
